LUNCH IS SERVED!

My older son is a big time food lover. He eats round the clock, always munching on something. I really don't mind, i honestly prefer it to not eating at all....that can be so stressful trust me.

As a result of his love for food, I try to have a snack or drink available most times as I feed him on demand....like I said most times and not always.

In order to prevent him from eating so much junk, I had to come up with a few simple, healthy home made recipes that I can readily prepare and serve him when its brunch time.

So today I will share one of those recipes. Sadly, I don't have real pictures but in subsequent recipe posts i will try to attach real life pictures.

This recipe is for a sandwich. I am not a professional cook....bear with me,but i will explain in details. Lol!

Ingredients
- 2 slices of bread
- Jam
- Lettuce
- Sausage

Preparation time: 10 minutes.

Procedure
1). Spread one slice of bread with a thin layer of jam.
2). Top the spread with lettuce.
3). Cut the sausage into thin circle slices and place all over the sandwich.
4). Spread the other slice of bread with a thin layer of jam and top the sandwich with it.
5). Place the sandwich in a pre-heated sandwich maker for about 1 minute.
6). When its ready, cut the sandwich into half and serve.

Notes
  • Honey is a great substitute for jam.
  • Hot dog is an alternative when sausage is not available however it should be boiled for a few minutes before use.
  • If you are using sausage, fry it before you start the sandwich preparation, saves you a lot of time.
  • In the absence of a sandwich maker, just skip that part. Cut into half and serve. I use it basically to press the sandwich together so that it doesn't fall apart.

So there it is, your healthy yummy sandwich. It is a great idea for your little ones school lunch. Adults can equally enjoy it. Its easy to prepare, nutritious, tasty and most importantly healthy.

  8. Nice write up...I heard honey isn't good for kids under 12months. I don't know how true...I like kids that eat as well, they hardly fall sick.

    1. Naija mom, you are so right. Kids under the age of one should not take honey. This is because honey is known to contain botulinum spores which can develop into bacteria that produces botulinum toxin inside your child and cause paralysis. Thank you so much Naija mom!
